For dinner, we had Chili Cheese Tots and Buffalo Chicken Dip. Yes, I used jarred, processed cheese, but is there any other way to eat Chili Cheese Tots? We were going for the whole, stadium experience!

I am a big fan of Wendy's chili. I have tried a couple immitations, but never found one that I really liked until Brody's birthday party last year. This recipe is the best chili I've ever had...better than Wendy's even. I've made it a couple of times since his party, and each time we talk about how it would make great chili dog chili. I took it a step farther and decided to serve it over tater tots. Great decision.
Ingredients
2 lbs of ground beef
4 8 oz cans of tomato sauce
29 oz can of pinto beans
29 oz can of kidney beans
1 cup diced onion
2 poblano peppers, diced (I remove all the ribs and seeds)
1 stalk of celery, diced
3 medium tomatoes, chopped (sometimes I put these in the blender or use my Pampered Chef chopper to make sure they aren't too chunky for Heath)
2 tsp Cumin
3 Tbsp Chili Powder
1 1/2 tsp Black Pepper (add more if you want more spice...it's really good)
2 tsp salt
2 cups water
Instructions
Brown the ground beef and drain the fat.
Add all ingredients to a pot and simmer for 2-3 hours, stirring often. Or, you could throw it all in the crock pot in the morning and let it cook on low all day.
