I'm not going to lie...these little pieces of heaven have become one of my favorite parts of Thanksgiving. A few years back I picked up a recipe card for Thanksgiving Paninis at Williams Sonoma using your leftovers. They are amazing!
You'll want to get some good bread with a crust on it. Mix your cranberries with some mayo and spread it on both the top and bottom pieces of bread.
Next, pile on some turkey.
Then add some stuffing and gravy. You could add some potatoes, but I prefer not to.
Put the top piece on and brush both the top and bottom with some olive oil.
I have this great little appliance called the Griddler. If you don't have a panini press, you could grill it in a skillet with a brick or a second skillet on top to press it down. You want to get it nice and flat.
And when it's done, cut it in half and serve it with some leftover mashed potatoes, sweet potatoes and green bean casserole. Or just eat it by itself.
