Sausage and Potato Skillet

We found another keeper last night! I bought a bunch of turkey kielbasa and smoked sausage a while back when they were on sale, and I wanted to try something new. So I looked around and found this recipe. I had no idea that I would share this on the blog, so I didn't even bother to take pictures! Here is one I stole off the site! It reminds me of something you could get at Silver Dollar City.


Sausage and Potato Skillet

6 larger Red Potatoes
1 lb Turkey Smoked Sausage, sliced (Next time I'll throw another pound in so that we have leftovers!)
2 medium chopped Green Peppers (I might add more next time)
1 medium chopped Onion
2 tablespoons Canola Oil
1 teaspoon Dried Oregano
1 teaspoon Dried Basil
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 1/2 cups Water
1 1/2 cups Shredded American & Cheddar cheese blend (I used Crystal Farms Mac 'n Cheese blend and it was great)

I did all of this in my smaller stock pot. There's no way it would have fit in a skillet! 
Brown potatoes, sausage, green peppers and onion in oil (I let them go for about 15 minutes, tossing frequently to make sure everything was cooking)
Add water and seasonings.
Cover, bring to a boil and let it simmer for about 20 minutes.
Uncover and add cheese to top. There will still be a lot of liquid, but that's ok. I thought I screwed it up, but once I added the cheese it turned into the a sauce. No need to stir the cheese in, just let it melt and serve!

I love it because it's easy, cheap and everyone asked for more! Enjoy!
