I have no pictures for this because Heath wasn't home when I made it, so I was watching the kids while cooking...that doesn't allow for many moments to take photos! And then we ate it up so fast, that by the time I even remembered to take pictures, it was gone.
I have been experimenting with BBQ Chicken Pizza for a couple of years, and I think I finally nailed it! Usually the sauce is too much and we end up being less than impressed. I had come across a recipe for Hawaiian BBQ Chicken (I can't remember where it was, so I can't give credit) and I sort of used that as my inspiration. I put 3 frozen chicken breasts, a diced onion, about a half of a fresh pineapple and a bottle of Sweet Baby Ray's into the crockpot. Then, I let it cook for about 6 hours or so. When the chicken was fully cooked, I shredded it and spread it onto refrigerated pizza dough. Then, I topped the pizza with Kraft Pizza Cheese (cheddar and mozz mix).
It was sooooo good! Madelyn ate about as much as me (we might need to do something about that) and Brody ate enough (he's been a very poor dinner-eater lately), but I know he liked it! And Heath RAVED about it. He usually doesn't say too much about what I make. I have to ask if he likes it, and he usually says everything is good, but he doesn't go over the top or out of his way to brag about my cooking. But he sure did like this one, so I guess it's a keeper.
I used a little less than half of the chicken on the pizza, so we had some left over to make sandwiches. They were equally delicious (or beeeeelishish as Brody would say).
